Egg love

I have a thing for eggs; I think you can do anything with them (except overcook them, of course) and they're great. This is something I do on the weekends and in summer that makes me really happy:

Toast a piece of your favorite bread and top with either pesto, goat cheese or smoked salmon. Cook the egg however you like it -- anything works with this -- and then top with fresh tomatoes, basil and a drizzle of olive oil. This and a cup of coffee is heaven, trust me!
